1. Let’s talk about Nashville. I was pretty much having a heart attack the whole entire finale, and have slipped into a depression now that it’s over. I really don’t think I’m going to make it till fall!! The only thing that might cure it is the Bachelorette…SO excited!! And Rayna’s daughters on the show…OBSESSED, OBSESSED, OBSESSED.
2. I just can’t get over this sweet baby. He is just such a precious little boy and I am so lucky to be able to hang out with him every day. Hugs and kisses from him are my absolute favorite thing in the whole entire world.
3. My favorite sandwich that I could seriously eat for dinner every night: Scrambled egg w/ provolone, avocado and strawberry jam. YUM.
4. We moved into our house last September, and while most of it is done we still have some work to do. We still have to paint all of the bathrooms and the spare room upstairs. I have done some decorating but haven’t done that much because I wanted to wait until everything was done. I love the quilt and blanket we have on our bed and think I want to do more of that print throughout the house.
5. As you know, I have been incorporating greek yogurt into my baking lately. Well, the other night I wanted to see if I could lighten up boxed oatmeal cookie mix by replacing the butter with greek yogurt. I played around with different amounts and ended up with a delicious, chewy and not even remotely skinny tasting cookie. The next time you are in a pinch and don’t have time to make oatmeal cookies from scratch- use box mix and lighten them up!!
Skinny Chocolate Chip Oatmeal Cookies
- 1 box chocolate chip oatmeal cookie mix
- 2/3 C. plain greek yogurt
- 1 egg
- In a bowl combine cookie mix, yogurt and egg.
- Stir with a spoon until completely mixed.
- Drop by the heaping tablespoon onto a greased cookie sheet.
- Bake for 9-10 minutes.
*The first batch I baked for 10 minutes and the second for 9 minutes. The cookies baked for only 9 minutes turned out better in my opinion because they were perfectly gooey!
